Humm Dingers adds a large smoker on first anniversary

The father and son team of Ed and Andy Dinger, who launched a restaurant and bar one year ago in Valley Falls, will celebrate their first anniversary this weekend.
The name they came up with was Humm Dingers.
The featured meal this weekend will be baby-back ribs cooked in their new smoker located behind the patio.
The two have tried smoked meat specials, but their cooker was too small, Ed Dinger said.
Andy Dinger found what he wanted on Craig’s list and wasn’t long getting it bought from the owner at Americus. The long, four-bay steel cooker was built by its former owner, Ed said, and he had won numerous trophies in the barbecue competiton throughout the area.
The two cooks say they will be cooking brisket and ribs and probably put an entire hog in there one of these days. A large fryer fueled by propane will also turn out the chicken and fish specials.
The owners said the past year has had its ups and downs trying to grow a small business and acquire good help, but it’s continued to grow and be successful. The business now has three full-time waitresses and two part-time, a part-time bartender, and a couple of part-time cooks.
Improvements have been made to the smoker’s patio outside that include a roof and woodburning stove to huddle around when it’s cold.
Humm Dingers is located on K-4 highway behind the liquor store.
